Lugma in Arabic means "a bite." For Noor—co-author of two Ottolenghi Test Kitchen cookbooks—those bites have shaped her career. Raised in Bahrain and now based in London, she draws on the elaborate rice dishes and black limes of the Gulf, the herb-heavy and sour flavors of Iran, the heat and spice of Indian cuisine, and the vibrant dishes of the Levant to form a collection that is both rooted and reimagined.
